Is it possible to install android 4.1.2 on my iphone 4s?
It's just a thought I have because I'm really, really pissed off with iTunes. It limits EVERYTHNG.

You can't install another operating system on an IOS device.
You're right in the fact that you have the option to jailbreak your device which would allow to use Android style themes, but does not solve your problem with the interface.
There's a website that sells "imitation" iPhones for a pretty reasonable price. These phones run Android, not IOS and would therefore be able to be managed in the way you are describing.

Definitely can't put an android platform onto an apple device. You can jailbreak it and get the android theme. But thats about it.
