It depends on the game and the time between minimizing and reopening. If you open a lot of apps after minimizing, the game state may be removed when more memory is needed. The developer of the game has to implement this feature for it to become available.
Most of the time, when you switch between apps, the switched app is set to "resume".So when you return to it, you can resume it. But there are limits of opening apps in background. It they exceed the limit of RAM, they will be closed and you will have to start the app. So if you are between, do not open do many apps.
