My iPhone 6 mail app was hacked?

My iPhone mail app wasn't loading any enew emails at all so I took a closer look and noticed that instead of the messages being sent to me, it said it was being sent to a McDonald's PIN # (this is the hacker's details).

I checked my info in the contacts list and my nickname was changed to that McD pin and my address, username and password were in my home address box and notes section (fortunately, this was my college info which expired years ago). I deleted all that and the issue of inbox not loading messages seems to have disappeared (for the moment).

My question is, is it over? Was this part of a hacker code that's now gone now that I deleted this? Or should I do a factory restore on my phone to play it safe? Thanks in advance for any help you guys can provide.

Will my photos be saved on iPhone 6s after I restore the device?

I made sure to disable find my iPhone and restore the phone. Will my photos still be there when the phone is set up? I did this yesterday when I gave the phone to my step dad for him to set up for my bro and I can't stop panicking if the photos still was on there. As sometimes when you set up phone it will ask you to enter previous iCloud account which was logged in on the phone.

How did they turn off the messages from the phone but not the calls? Apple phone

So my boss is doing some shady **** and we think he s sleeping with one of our co-workers who is now sending him videos of us and lying about us. He has an iPhone upstairs which he uses for music, this is his old iPhone. For a while we were able to see his iMessages coming through but he ended up turning it off. We can however see who calls him throughout the day, how did he shut off the messages and not the phone calls? Is there anyway we can turn them back on.
