What happens if i click delete all content and settings on my iphone?
If I click "delete all content and settings" on my iphone, is it going to delete all my contact, message and notes?

Well yes, it deletes all content and settings on your phone as stated.
It will delete everything and I mean everything. It will be like your iPhone when you first bought it. Nothing except the original apps such as: App Store, Photos, Contacts ( but no contacts inside), Phone and so on.
