What happens if you place a sim card into an iPhone that is not yours?

Just wondering… If someone stole my iphone (at&t) and restored it, giving me no possible way to track it, would they be able to put a sim card (at&t) and use it… Or would that allow me to possibly track it?

I think you are out of luck. If they throw away your old sim card and replace with theirs, then there's no way of tracking it
