What is the part of the iphone screen that we actually touch called?
I want to replace it or try to fix it because it is not sticking to the part behind it very well, and it feels like ithe screen is protruding out of the bezel a little bit. Any help or advice?

You actually touch the glass. The part that actually "sees" the touches and makes use of them is the digitizer, which is under the glass.

The iPhone uses a heat sensitive screen. It isn't really a touch screen at all, because it doesn't detect touch at all. Older touch phones used those and they had very poor response speeds, that's why you can't wear gloves while using your iPhone. Due to this hi-tech heat detection system, you probably won't be able to ghetto rig it. I suggest calling Apple, or better yet just go to an Apple store. If push comes to shove, you can always sell it and try to get a iPhone 4s
