What Wi-Fi broadband speeds does my ipad3 and iPhone 5 support?

I have over 100mb broadband and wondered what speed my two devices should reach

There are many factors here.

Most are to do with your router.

Speeds will drastically vary depending on how your router is setup and what other devices are connected to it.

I'm guessing you do have a Wireless 'N' capable router. The iPhone 5 and iPad 3 have Wi‑Fi @ 802.11n 2.4GHz and 5GHz.

What other devices share the Wi-Fi in your home, is everything on wireless N? If you are also broadcasting in Wireless G for older devices then this will only hinder the speeds for your Apple gear.

Even if everything is on wireless N, you can broadcast in dual 2.4GHZ and/or 5GHz. Selecting just one will help improve things, and you will get a much faster speed at 5GHZ.

Buying a better wireless router to replace the standard one supplied by the provider will only help too.

So it really depends. If I had to take a guess, you are are broadcasting mixed and not fiddled with any settings on your router. If so you'll probably be getting around 35mb on your iPhone 5 and 40-50 on the iPad?

Anything less than those numbers then you have a problem somewhere else anyway.
