Would jailbreaking my iPhone allow me to use music players without iTunes?

Currently any MUSIC player (like the stock music player everyone has) that you download is automatically routed to the default music folder in your iPhone which only accepts music that is transferred through iTunes. Meaning the only way your iPhone will detect music is if you connect it to your iTunes and sync it. The only other way is to download a MEDIA player (such as VLC) which allows you to transfer any media files straight into the app.

My problem is, I don't like the interface of media players. They lack the organization of "Songs" and "Artists" like music players. So my question is, if I jailbreak my iPhone, would I be able to reroute the default music folder in my iPhone so that I can listen to music using a music player instead of a media player?

I have tried to copy music files from my iPhone to iPod touch without using iTunes(Using WinScp). The files do get transferred in right location but doesn't show-up in list of songs or albums. ITunes encrypts all data and even changes the name to music files. So if you jailbroke and transferred the files the music wouldn't work in default music player.
