Can the Police track down your iphone?

I hacked one of my friend from instagram, i blocked everyone of his followers one by one because i was mad at him. Some hours later i see that he called the police and told me that they're going to investigate. I'm scared they will find out it was me. But is something like this the police would investigate?

So I was at a wrestling tournament and when the matches started I was working concessions when I noticed something on the stairs I went up to it and it was an iPhone. I waited for someone to come back but no one did After the tournament I went to GameStop and sold it. If they deactivate the phone will GameStop or the police pursue me?

In one part she takes the SIM card out of the phone so no one can track it. But is that also true with iPhones? Like of you take the SIM card out can the police still track your phone. Because I was think yes because it has your number. But is that true? It's not traceable if you take the SIM card out. But if not is there a way and how?
