Technically you can't brick an iPhone through jailbreaking as it's all software related and can be fixed through restores. Bricking would be hardware related
As for updating a jailbroken device, it really depends on how you do it. NEVER go to the settings on your device and reset it that way, that will erase some important jailbroken files which causes problems such as boot loops and forced recovery loops.
If you want to update your device then you need to backup and then do a restore via iTunes on a computer. This will remove all jailbroken files so that it won't have any issues when updating
