How to restore an iPhone without updating?

I'm trying to restore my iPhone 4S to give it to my friend but iTunes keeps telling me to update my iPhone to the latest update (7.1.1) but I already updated it. It takes forever to update and I've been waiting for 4 hours to update it.
My internet's pretty good though (and the internet occasionally cuts off so I have to restart the update all over again)…

Are you using Windows or Mac?
For windows, download the ISPW for the phone, (the most upto date) by doing a quick google, then just before you hit the restore button hit the shift button (keyboard) and choose the ISPW you just downloaded, that will cut out the big download package needed from itunes.
If you are using mac, then the method is the same just you click restore device and choose the ISPW that way instead of shift and restore.

Restore? Don't you mean reset? Reset is going back to factory settings and if you're going to give the phone to your friend you would want to do that so your friend can free reign over the phone and buy the apps he or she wants to.

Also don't forget to turn off "find my iphone" so that your friend can have a useable phone without having to ask for your apple id.

Currently I'm using the iPhone 5s on iOS 8.3 I know if I were to update my phone to the latest OS I may notice some slowdown on my phone's performance, since it may not have the "muscle" to handle certain functions. The phone is not logged into iCloud so I can't wipe it using iCloud. I just need a way to restore the iPhone but keeping it on the same iOS version.
