If you do the 'press home button+on/off button' thing, no… It'll just revert your setting back to default. If you do it via iTunes with the whole "reset to factory" then yes everything will be lost and your iPhone will be in the exact same state when you first launched it. But you can always back up your data and then do it so your apps and stuff come back later. Its best to backup to icloud BTW.
Reset in any electronic item removes all installed program.
