Just wondering if I pay money to unlock my iPhone so can I use any sim card?

Yes. Unlocked phones mean you can use any network sim cards. If it is locked you need to jailbreak it but i wouldn't recommend that.

It depends. If your phone is CDMA, you can use it on any CDMA network. If it is GSM, you can use it on any CDMA network. You can't use a CDMA phone on a GSM network and vice versa, regardless of whether it's unlocked or not. IPhone 5 uses SIM cards for both CDMA and GSM, but the rule still applies.
