Can I erase my iPhone 5 without updating to IOS 7?

I'm on IOS 6. If I erase my iPhone using iTunes, it'll automatically install IOS 7. If you go to settings > general > reset > erase all content and settings and click on it, will it stay on IOS 6? Or will it get stuck? (I've heard people saying it got stuck).

Erase all content and settings only removes your content not the phones software. Removes your pic/videos/apps/contacts/data… That sort of thing.
