How to backup my jailbroken iPhone through iTunes?

Ok so jailbreaking is great. But there's one little thing I don't know about it. Ok so let me give you can example. - so I'm about to jailbreak my iPhone on Evasi0n and before I jailbreak I backup my iphone to iTunes on the computer. Great so I jailbreak my iphone and everything goes smoothly. 1 year down the line I decide that I'm going to upgrade my phone. So the last backup I done was when I first jailbroken the iPhone 1 year ago. So of course throughout that year I've added lets say 800 pictures and downloaded 38 more apps which have data in them and made some changes. So of course I don't want to lose all that data. So would I be able to backup the jailbroken iPhone to iTunes again. Then get my new iphone and restore it with the latest backup i done with the jailbroken iPhone. Now I obviously know that the new iphone won't be jailbroken but will all my data like the 800 pictures and 38 apps all be added, downloaded and restored ok? Kinda confused:/

Use iFun Box--it is free software--to export photos to your computer or you can export them from My Computer(in Window). But for app data, sorry buddy, you are going I lose them. But you can also export apps to using iFun box. Just right click at the app and choose "Back Up as.ipa" (in case, the apps are not purchased through iTunes store).
