I suppose so. Usually they tell you to backup your device before sending it in. If it was me, I d back it up & clear it out so when I get it back it would just be to restore from that backup & continue from there.
Yes they can. So take them off if there's stuff you don't want them to see. Having worked in a repair shop, people do go through them.
