The iPhone is assembled by adults, but they do make as little as the rulers of the PRC can pay them, and keep most of the people in slave-like conditions, but they do need a minimal middle class to look good in special cities they allow foreigners to visit.
Technically you're correct, that it's possible to avoid the tariffs by not purchasing tariffed goods. But the reality is that China is so integral to global supply chains that you almost certainly are buying some goods from China. It's not even about finished goods. A lot of things which are assembled in America use parts which were made in China. Those goods have taxes on them as well.
