What exactly does the iPhone backup back up?

I'm going to update my iPhone software (finally!) and I'm worried that all of my data won't be saved. For example, will I have all of my notes, picture folders, app data, emails, etc? I'm terrified that I'll lose my notes. I can email them to myself if need be and there's really no way to back it up, but I'd like to aboid that tedious process if possible.

Yes, it should back up your notes - provided you have turned it on.

If you use iCloud, you can go to settings --> iCloud and turn on everything you want backed up on iCloud. You only get 5GB or free storage, so make sure that you have enough space to back everything up.

Everything that is backed up will be restored when you activate iCloud again on the new OS.
