Yes it will automatically change your UAE network into a Canadian network so you will still be able to call and text people and use data although I recommend you turn off data roaming just before you leave the Emirates as you will be payed extra even though you won't notice but you will come home to a MASSIVE phone bill (trust me it happened to me) so stick to using wi-fi when it's available and not 3G
