Is it possible to uninstall IOS8?

I've downloaded IOS8 on my iPhone 5s, and my mother has downloaded it onto her iPhone 5s too. Both phones are now incredibly slow, almost to the point where they can't be used. The screen freezes, apps don't respond, it sends texts while I'm still writing the message, and I can't answer calls. Both phones are only two months old and have never been dropped or damaged in any way. I didn't install it on my old iPhone 5, and thats working perfectly. Is there any way to uninstall it?

My Ipad Mini is slow to, when I installed IOS8 don't worry. Apple with patch this As soon as possible

Thats why I always wait a month to install, let a few patches come out first

I have 5 apple devices on ios8 and they work just fine, 4,4s,5, 6+ and ipad3, do a hard reboot

It would let me in anytime I wanted, and then I accidently updated Itunes and it decided to lock me out because I don't have a sim card. I can't back up my phone as every time i connect it to itunes it says i need to restore it and when i click restore it says i can't. And i want to back it up. Can i uninstall and reinstall to solve this problem? Or will i lose anything at all on my iphone? (not just music.contacts and texts and photos etc too) or can i make a new account and sync my phone with it as if it's the first time i've ever synced it? Would that work or screw it up?
