What will happen if I restore my Jailbroken iPhone 3gs?

A friend of mine found this iPhone brand new in the box… Don't ask. When we found it we were unsure as to what network the phone was locked to so I was advised to get it Jailbroken, not knowing anything about iPhones I did so. It's an iPhone 3GS and the iOS currently running on the phone is 4.0.2 I'm aware this is really old software but it didn't bother me until recently when I realised that barely any of the apps I would primarily use will operate with software like mine. What can I do to update or get my apps working correctly again? I don't even use any of the Jailbreak features is it necessary to have it Jailbroken?

My parents are paying for my phone while they help me through college. They monitor my phone bill to see if I'm talking to my boyfriend. My boyfriend and I have a child together and we're trying to work things out so we can be together for the sake of our child. I wouldn't normally have my parents help me with a bill but since they are paying my way through college it was my only option for me so I can continue with my education.
My question is, Are there any iphone 3 apps that won't show any phone calls or text on the bill?
